Snacks for the day......

Safe Beef Burger
(338 cal., 29% from fat)
Here's how:
Juicy burgers without worry
Pan-brown or barbecue these beef or turkey burgers; both methods produce delicious results. To barbecue, place patties on a lightly greased grill over hot coals or high heat on a gas barbecue (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. They cook in about the same amount of time as in a frying pan. Embellish burgers as desired, adding to taste Dijon mustard, Mayonnaise (low-fat, if desired), Del Monte Catsup, pickles, lettuce leaves, sliced tomatoes, onions, and cucumbers.
    
Ingredients:
1       pound ground lean (7% fat) beef
2       large egg whites
 1/2  cup minced onion
 1/4  cup fine dried bread crumbs
1       clove garlic, minced
          About 1/2 teaspoon salt
          About 1/4 teaspoon pepper
4        hamburger buns, split and toasted

Preparation and Cook time: About 15 minutes
Serves: 4
1. Mix beef with egg whites, onion, bread crumbs, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Form mixture into 4 equal patties about 1/2 inch thick.
2. Place an 11- to 12-inch nonstick frying pan over medium-high heat. 
3. When pan is hot, add beef patties and brown on each side, cooking until a thermometer inserted in center of thickest part reads 160° and there is no pink in the center (cut to test), 8 to 10 minutes total.
4. With a slotted spatula, transfer beef patties to buns. Add salt and pepper to taste.

Per serving: 338 cal., 29% (99 cl.) from fat; 30g protein; 11g fat (4g sat.); 29g carbo. (1.4g fiber); 687mg sodium; 65mg chol.

Safe Turkey Burgers
Ingredients:
1      pound ground lean turkey breast
2      large egg whites
 1/2  cup minced green onions
 1/4  cup fine dried bread crumbs
1      tablespoon minced fresh sage leaves or 1 teaspoon dried rubbed sage
        About 1/2 teaspoon salt
        About 1/4 teaspoon white pepper
4      Kaiser rolls, split and toasted
        About 1/2 cup whole-berry cranberry sauce

Preparation and Cook time: About 15 minutes
Serves: 4
1. Mix turkey with egg whites, onions, bread crumbs, sage, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Form into equal patties about 1/2 inch thick.
2. Place an 11 to 12-inch nonstick frying pan over medium-high heat.
3. When pan is hot, add patties and brown on each side, cooking until a thermometer inserted in a center of thickest part reads 160° and there is no pink in the center (cut to test), 8 to 10 minutes total.
4. With a slotted spatula, transfer turkey patties to rolls. Add cranberry sauce; season to taste with salt and pepper.
